Locally sourced ingredients: Regular menu 95% from within 300 miles; Weekly specials 99% from within 300 miles / 85-90% within 50 miles. We shop at 3 area farmers' markets (in San Luis Obispo and Arroyo Grande). We serve local seafood. We change our special weekly depending on what is available at marmers' market and via our farmers. Local specialty products used: Global Gardens organic extra virgin olive oil, Santa Barbara Pistachio Company organic pistachios, Rinconada Dairy sheep's milk cheeses, SLO-Town Creamery cheeses, Santa Maria Brewing beers, Telegraph Brewing Co. beers, Old Creek Ranch pork, lamb, and eggs. American Flatbread is certified organic by CCOF. Our building is a "green" construction of "blue max" material with a heat reflecting ceramic roof and solar tubes. We have an acre garden in back that we grow herbs and vegetables for the restaurant in; we compost all our vegetable waste in the garden. We recycle glass wine bottles via Richard Sanford's Alma Rosa winery program.

Our menu changes seasonally. We shop farmers' market and we also have two of our own gardens here on property where Chef Frost grows everything from herbs to artichokes. Local seafood on the menu includes halibut, bass, Santa Barbara spot prawns, spiny lobsters, salmon, calamari and crabs, when available. The Resort received a Green Award in 2006 and an ISO 14001 certification for the third year running.

80% of all produce is local. We shop farmers’ market several times a week. We serve local seafood when available. Local specialities on our menu include watermelon radish, mulberries, little gem lettuces, heirloom tomatoes andItalian varieties of eggplant.
We offer weekly global seasonal specials. We strive to be sustainable in our operation. We recycle (all aluminum, glass bottles, cardboard, chipboard containers, egg cartons, plastics); we compost to local farmers; water conservation nosel on sinks; Reverse Osmosis water filtration; Natural cleaners; non aerosol air fresheners; Water Cooled Air Flow System. We were the first restaurant to receive Santa Barbara's Green Award. The interior booths were recycled from the original bar that was in the restaurant 10 years ago. We use glass on tables to reduce the amount of linens that need to be used therefore cutting down on water consumption. Employees are encouraged to ride bicycles to work instead of driving. Many employees even walk.
